Slice ripe plantains diagonally. Fry in cooking oil on med-high heat for about 10 minutes. Sprinkle with a little salt or sugar depending on your mood!
These plantains were semi-ripe. So they are not as sweet and mushy as the tradional platanos fritos. I like 'em this way, but if you want them really sweet, the plantain has to be super ripe! Almost entirely black.
I am a stay at home mom, and I basically created this blog to share recipes. I'm sure this blog will extend into other areas of my life. I love to cook, but don't always know what I'm doing. I do lots of research and learn as I go. Many times I am writing these recipes before trying them, so I'm sure I will come back and tweak them as needed. Sometimes I have something in my head and if I simply write it down...well, I'll lose the stinkin' piece of paper! I guess I'm in the technology generation. I find it difficult to be organized with hard copies. I tend to want things typed up and filed away in cyberspace. I don't really know if that's wise, but it's habit. So here I am!
